Cooperativa La Voz: San Juan La Laguna
San Juan La Laguna es la capital cafetera del lago, y la Cooperativa La Voz del Pueblo Mam es la razón. Variedades de especialidad en el lago
Las principales variedades cultivadas en la región de Atitlán incluyen Bourbon, Catuai, Catimor, Caturra, Sarchimor, Typica y Gesha (a mayores altitudes). El café es casi enteramente de proceso lavado (beneficio húmedo), que produce el perfil limpio y brillante por el que la región es conocida. La temporada seca (noviembre a abril) coincide con el inicio de la cosecha, haciendo de enero y febrero los mejores meses para combinar buen clima con producción de café en su apogeo.
Métodos de procesamiento explicados
Tres términos aparecen en los sacos de especialidad de esta región y vale la pena conocerlos:
- Lavado (washed): La pulpa se retira del grano antes de secar. Da una taza limpia, brillante y con acidez frutal marcada. La mayoría del café de Atitlán es lavado.
- Natural: El cerezo completo se seca con el grano adentro. Da una taza más dulce, con más cuerpo fermentado y notas a vino.
- Miel (honey): Método intermedio: se deja algo de mucílago sobre el grano durante el secado. Da más cuerpo que el lavado pero menos intensidad que el natural.
El café de olla: la preparación tradicional
Antes de que llegara el café de tercera ola, la preparación tradicional en los hogares guatemaltecos era el café de olla: café molido grueso hervido directamente en agua en una olla de barro, a veces con canela y azúcar de caña (panela). Todavía lo encuentras en comedores locales y puestos de mercado. Es fuerte, terroso y dulce de una manera que los métodos de filtrado o espresso no replican. Si lo ves en un menú, pruébalo.
