収穫シーズンと訪問のタイミング
アティトラン湖のコーヒー収穫は12月下旬から3月まで続きます。この時期、赤いコーヒーチェリーが最も熟し、水洗式の精製所がフル稼働します。収穫期に訪れると、斜面での摘み取り、協同組合での選別、豆で覆われた乾燥場など、一連の工程を目にすることができます。収穫期以外は木々が育つ時期で、協同組合のツアーは行われていますが、収穫期特有の光景は見られません。乾季(11月〜4月)は収穫の始まりと重なるため、1月と2月は好天とコーヒー生産のピークを両方楽しめる最良の時期です。
精製方法の違い
この地域のスペシャルティコーヒーの袋には次の3つの用語がよく登場し、知っておく価値があります。
- 水洗式(ウォッシュド): 乾燥前に果肉を取り除きます。クリーンで明るく、果実感のあるカップに仕上がります。アティトランのコーヒーの大部分はこの方式です。
- ナチュラル: チェリーごとそのまま乾燥させます。より甘く、発酵感が強く、ワインのような風味になります。
- ハニー: 中間的な方法で、乾燥中に一部の果肉を残します。水洗式より厚みがあり、ナチュラルほど強くない仕上がりです。
豆を持ち帰る方法
焙煎したコーヒー豆は、しっかり密閉して申告すればほとんどの税関を問題なく通過できます。挽いた豆よりも新鮮さが長持ちするホールビーンを選びましょう。サンフアンのラ・ボス協同組合や、パナハチェルのカフェ・ロコ、クロスロードでは、焙煎元から直接豆を購入できます。湖で直接購入すれば、生産地価格で支払え、代金はそのまま生産者の手元に残ります。ラ・ボスとクロスロードは依頼すれば真空パックにも対応してくれます。涼しく暗い場所で保管し、袋に記載された焙煎日から4週間以内に使い切りましょう。
カフェ・デ・オジャ:伝統的な淹れ方
